I found this very informative. Skipped out a load of the technical stuff, but felt I had a good evidence-based introduction to lifelong changes following diagnosis!

A very, very well researched book regarding the effects of gluten on the system. Even if you don't have Celiac disease, I learned a lot of things about diet and health. It is a little clinical and medical for some readers, but if you can plow through this, it is well worth it.
